Want the best new kitchen? Get a temporary one first

A new wave of kitchen refurbishment is being installed in the nation's hospitality sites as caterers are finding their old kitchens do not meet acceptable standards. In many cases, catering managers and chefs - especially those who've worked in the same kitchens for several years - are stunned to find that the temporary kitchens they use whilst refurbishing are far more advanced and sophisticated than they'd expected.

And this, says Container Kitchen Systems, one of the UK’s leading suppliers of temporary kitchens, is a good reason for being adventurous when choosing facilities to tide you over a refurbishment.

"When many caterers design their dream new kitchen, they often ask us for a temporary kitchen that's as like the old one as possible", says Mark Kingston, managing director of CKS. "They worry about not disrupting their work.

"But if you are planning a refurbished kitchen, then being adventurous with your temporary one is often by far the best idea. It can give you extra ideas as you rebuild, and you can test new layouts or new equipment. And making a difference is what refurbishment is usually about. Anything less is just a spring clean!"

So Mark Kingston argues that a temporary kitchen should probably be more experimental than your refurbishment, not less. It's the cheapest way of trying out the most advanced equipment, to see if it works for you.

Refurbishment: The Cheaper OptionAnd it's a good opportunity to train staff with the minimum of pressure. For example, chefs could familiarise themselves with new equipment and cooking procedures before the fanfare of a new reopening.
